Cheese cart

The cheese cart is a rolling presentation trolley on which thirty to sixty French and international cheeses are displayed, offered to the guest at the end of the meal before dessert. The cart is presented at the cover by a fromager or specialised chef de rang, who describes each cheese (region, raw or pasteurised milk, aging, wine pairing) and cuts portions in front of the guest. Several three star tables maintain this tradition brilliantly, notably Le Cinq Paris, Lasarte Barcelona, La Pergola Rome and Helene Darroze at The Connaught.
