Chantilly cream
Chantilly cream refers to fresh liquid cream, high in fat, whipped until it holds volume then sweetened and flavored, usually with vanilla. Success requires very cold cream of at least around thirty percent fat. Popularized under this name at the Chantilly estate near Paris, it accompanies fruit, desserts and hot drinks, and forms part of diplomat cream.
