Cellaring


Cellaring is the act of placing a wine in controlled storage conditions so it can age until its peak maturity. It requires stable temperature, suitable humidity, darkness and freedom from vibration. A collector builds a cellar by buying young wines intended for the long haul, then forgetting them for several years. Keeping a record of what goes in and out makes it easier to track the evolution of each bottle.
