Bún chả


Vietnamese speciality from Hanoi pairing grilled pork and rice noodles. Minced patties and thin slices of pork belly, charcoal-grilled, sit in a warm sweet-and-sour dipping sauce (nuoc cham), served with white vermicelli and a basket of fresh herbs. Traditionally eaten at lunch, it balances sweet, sour, salty, spicy and smoky, and exemplifies Northern cuisine in refined dining.
