Bassinage
Bassinage refers to the gradual addition of water or liquid at the end of kneading, once the gluten network has already formed. This technique raises the hydration of the dough without harming its structure, improving the softness and keeping quality of leavened products. Added in small amounts so it is absorbed without slackening the mass, bassinage is used notably for brioche doughs and certain butter-rich viennoiseries.
