Altitude directly influences grape ripening: temperature falls by roughly 0.6 degrees Celsius for every hundred metres of elevation, slowing the cycle and preserving acidity. The day to night temperature range widens at height, encouraging colour and aroma development while retaining freshness. This advantage explains the rise of high altitude vineyards in Argentina's Andes, where some plots sit above 2,000 metres and yield wines of notable balance.
