Aeration
Aeration refers to whisking air into a preparation so that its volume expands and its texture lightens. Beaten egg whites, whipped cream and genoise batter all rely on trapping bubbles within a network of proteins or fat. The overrun measures the ratio of final to initial volume, a decisive figure that governs the lightness of mousses and frozen preparations across fine pastry work.
